Zucchini Fritters

A great addition to any salad; and on a warm day you can cook them outside on the barb-b-q or frying pan. Make a big batch and use them in lunches or freeze for a quick meal.

  • 450g zucchinis, grated
  • 30g parmesan cheese, grated
  • 2 eggs, beaten
  • 4 tbsp flour of your choice
  • Salt & pepper to taste
  • Pinch chilli flakes
  • Splash of olive oil

What To Do

  1. Squeeze the zucchinis in a tea towel to remove excess water, then combine with the parmesan cheese, eggs, flour, salt and pepper and chilli flakes.
  2. Heat a splash of olive oil in a frying pan and add 2 tablespoons of the mixture for each fritter.
  3. Cook three fritters at a time for 2–3 minutes on each side, until golden brown, then keep warm while you cook the remaining fritters.
  4. Serve immediately.
